Zucchini Carrots Fritters
This fritters are something you need to make on Your RAMADAN So7our! How so crispy these comes out either baked or fried .. you have to eating them with mashed avocado or labnah on top..!
They really can go with anything your having on the side 👌🏻🔥
How i made them
3 medium grated zucchini
1 medium grated carrots
1/2 cup frozen or fresh corn
1 slice green onions chopped (optional)
1/2 cup oat flour or any kind ( corn flour or coconut flour or all purpose flour)
1 teaspoon salt & pepper
2 tbsp shredded parmesan cheese
1 teaspoon turmeric
1 teaspoon cumin
4 tbsp olive oil
2 eggs .
Get the zucchini and carrots and use our grater to shred them into smaller pieces.
Once you have the veggies grated let them set out on the paper towel with a dash of salt and let them about 10 minutes to let some of the moisture release .
Add the veggies to the bowl with oat flour and eggs and any other spices you love .
Give it good mix with a fork .
Use your hand or a spoon and slightly flatten with your palms.
You have to option here; sither fry on top with olive oil for about for minutes in each side , or bake in the oven for a bout 30 minutes or until done !!!
Topping it with mashed avocado, sliced tomatoes or hot sauce, labnah , basil leaves and enjoy the meal….
